Spicy Cabbage Soup

Ingrédients

  • 3 cups green or white cabbage, thinly sliced
  • 2 medium sized potatoes, cut in 1/4 inch cubes
  • 1 can of tomatoes
  • 1 medium onion, quartered and thinly sliced
  • 3 cloves garlic
  • 1-2 chili flakes
  • 2 tsp ground coriander
  • 1 tbsp dry mustard
  • 5 cups of chicken or vegetable broth
  • 2 tbsp of lemon juice
  • 1 tbsp oil
  • Salt and pepper to taste

Préparation

  1. Heat oil in a large soup pot. Sauté onion over medium heat for 5 mins. Stir in garlic and chili flakes. Sauté for 1 min.
  2. Stir in coriander and mustard. Add broth and rest of ingredients except cabbage. Simmer for about 20 minutes, uncovered until potatoes are tender.
  3. Add cabbage and cook for another 5 minutes. Season to taste.

Heavy version

  1. Sauté 200 g bacon in a pan.
  2. Holy Trinity : 1 stock celery -> chop + sauté + broth/stock cube/bouillon
  3. When boiling, add cabbage for 3 min.
