Soupe ezogelin çorbasi
Ingrédients
- 2 tbsp olive oil
- 1 tbsp butter
- 2 medium onion, diced
- 8 cloves garlic, minced
- 2 tbsp Turkish red pepper paste (biber salçası)
- 2 tbsp tomato paste
- 1 tbsp dried mint
- 1 tsp ground cumin
- 1 tsp paprika
- Red pepper flakes (to taste)
- 1 cup red lentils, rinsed and drained
- ⅓ cup coarse bulgur, rinsed and drained
- ¼ cup short-grain rice, rinsed and drained
- Salt & pepper to taste
- Chicken stock or water as needed
Beurre épicé pour le dessus :
- ⅓ stick of butter
- 1 tbsp of mint
- 1 tbsp of paprika
- 1 tbsp of Turkish red pepper paste
- salt to taste
- In a large soup pot, saute onions and garlic until fragrant before adding in both your tomato paste and Turkish red pepper paste.
- Add your lentils, bulgur, and short-grain rice and mix. Add in chicken stock until the pot is filled. let simmer for 30–40 minutes, or until the grains are soft and fully cooked and the soup has thickened. Make sure to stir occasionally.
- While this is going, make your spiced butter. Just combine everything under “spiced butter topping” and whisk together until combined.
- Serve your Ezogelin soup with a squeeze of lemon juice, and a drizzle of the spiced butter and enjoy!
