Ingrédients
- 2 whole bay leaves
- 1 tbsp salt
- 1 stp cayenne pepper
- 1 tsp black pepper
- 1/2 white pepper
- 1/2 ground cumin
- 1/2 nutmeg
- 4 tbsp unsalted butter
- 3/4 cup onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/2 cup green pepper, finely chopped
- 1/4 cup green onion, finely chopped
- 2 tsp minced garlic
- 1 tbsp Tabasco
- 1 tbsp Worcestershire sauce
- 1/2 cup evaporated milk
- 1/2 cup ketchup
- 1 1/2 lbs ground beef
- 1/2 lb ground pork
- 2 eggs, beaten
- 1 cup fine, dry breadcrumbs
Préparation
- Combine all spices and set aside.
- Melt the butter in a saucepan. Add the onions, celery, green onion, garlic, Tabasco, Worcestershire and seasoning. Sauté for 5-6 minutes.
- Stir in milk and ketchup. Continue cooking for about 2 minutes. Stirring occasionally.
- Remove from heat and allow mixture to cool for to room temperature.
- Place ground beef in a uncreased baking pan.
- Add the eggs, cooked vegetable mixture, removing the bay leaves and the bread crumbs. Mix by hand until thoroughly combined.
- Sape mixture into a loaf that is about 4 cm high, 15 cm wide and 30 cm long.
- Bake uncovered at 350° for 25 minutes, then raise heat to 400° and cook until done, about 35 minutes longer.
