Cajun Chicken Pasta

Ingrédients

  • 500 g pasta
  • 3 chicken breasts, cut into pieces
  • 3 tsp Cajun spice mix
  • 2 tbsp butter
  • 2 tbsp oil
  • 3 cloves garlic, minced
  • 1 green pepper, sliced
  • 1 onion
  • 4 small tomatoes
  • 2 cups chicken broth
  • 1/2 cup white wine
  • 1 cup heavy cream
  • Cayenne pepper and parsley for garnish

Préparation

  1. Cook pasta.
  2. Toss 1 1/2 tsp of Cajun spice with chicken pieces.
  3. Heat 1 tbsp butter and 1 tbsp oil in a large frying pan. Brown chicken and remove to a plate.
  4. Add remaining oil and butter and cook peppers and onions. Add garlic after a few minutes.
  5. Add remaining Cajun spice to vegetables. Cook for 1 minute. Add tomatoes and cook for 30 seconds. Remove vegetables.
  6. Add chicken broth and white wine to frying pan. Deglaze pan and reduce heat to medium-low.
  7. Add cream, whisking constantly, until cream thickens mixture.
  8. Add chicken and vegetables to sauce, stir until mixture is hot. Add pasta
